Bake Along with Chelsea: Healthier Homemade Oreos

The Leaning Tower of Healthy Oreos!

I am not much of a cooking person but during quarantine, I have come to love baking! I have so many healthy baking recipes saved but this might be one of my favorites so far. These are deemed “Healthier Homemade Oreos” by Instagram account, @plentysweet200. They are vegan/gluten free and they taste amazing! Below, I will share the original recipe as well as a few changes I made based on what I already had in my kitchen. Enjoy & let me know how yours turn out!

Ingredients

Cookie dough (do not eat raw):

  • 2 tbsp any oil (I used vegetable oil)
  • 1/4 cup creamy/nut seed butter (I used peanut butter)
  • 1/4 cup + 2 tbsp maple syrup
  • 1/2 cup cocoa powder
  • 1/2 cup flour (I used all purpose flour; I believe different kinds of flour have different densities so I don’t know if other kinds of flour will or will not affect this recipe)
  • 1/4 tsp baking soda

Cream Filling

  • 3 tbsp (vegan) cream cheese
  • 3 tbsp powdered sugar

Note: I already had leftover cream cheese frosting (same ingredients) from making carrot cake cupcakes a few weeks before so I just used that for my filling. I made that frosting with regular (not vegan) cream cheese so this part of my “healthy oreos” were not vegan.

Instructions

  • Preheat oven to 350˚F and line cookie sheet with parchment paper.
  • In one bowl, mix oil, nut butter & syrup.
  • In a separate bowl, whisk together flour, cocoa, baking soda & a pinch of salt.
  • Combine the two. Splash a little nut milk if you need to (I used cashew milk).
  • Roll out on parchment paper and cut cookies. Repeat until there is no dough left.
  • Bake for 8 mins.
  • Cool completely and sandwich with the filling.
  • Enjoy your healthy oreos!
